Sesame Sauce Udon
(ごまだれうどん)
Ingredients
| Vegetable Oil | 1 Tablespoon |
| Grated Garlic | ½ Teaspoon |
| Grated Ginger | ½ Teaspoon |
| Sesame Dressing | 4 Tablespoons |
| (Optional) Chilli Oil | 1 Teaspoon |
| Seasoning Mixture | |
| Miso Paste | ½ Tablespoon |
| Light Soy Sauce | 1 Teaspoon |
| Cooking Sake | 1 Teaspoon |
| Udon Noodles | 200g |
| Pork Mince | 150g |
| Enoki Mushrooms | 50g |
| Pea Sprouts | 10g |
Instructions
Cut the pea sprouts into 3cm pieces.
Cut the base of the enoki mushrooms off, then cut into 1cm pieces.
Stir and combine the seasoning ingredients.
Add the grated ginger, grated garlic and the vegetable oil to a frying pan and fry until fragrant. Then add the pork mince and continue frying. Once the pork is cooked through, add the enoki mushrooms, cook them through as well, then add the seasoning mixture and continue frying.
Boil the Udon until cooked as per package instructions, then immediately transfer to a bowl full of iced water to cool.
Transfer the Udon to a bowl. Add the Sesame sauce to the udon noodles from Step 1 and mix thoroughly to coat.
Top with the pork mince and enoki mushroom mixture from Step 4 and garnish with the pea sprouts from Step 1 and chilli oil (Optional).
