Simmered Mackerel in Miso Sauce
(サバの味噌煮)
Ingredients
| Mackerel | 2 Fillets |
| Leeks (Only the white portion) | Half a stalk |
| Ginger | 1 Piece |
| Water | 150ml |
| Sauce | |
| Light Soy Sauce | 2 Tablespoons |
| Mirin (Sweet Rice Wine) | 2 Tablespoons |
| Cooking Sake | 2 Tablespoons |
| Sugar | 1 Tablespoon |
Instructions
Remove the blood lines from the Mackerel fillets and make shallow cuts in the skin.
Pour boiling water over the Mackerel fillets to remove any fishy odours, then cool in iced water.
Mix together the ingredients for the sauce. Heat up a frying pan and add the sauce. Once the sauce starts to bubble, add the Mackerel fillets with the skin side facing up.
Skim off any scum from the water.
Add the leeks and ginger, then cover with a drop lid/cartouche and simmer until cooked through.
Mix the miso into the sauce and continue to simmer for 10 minutes, occasionally spooning the sauce over the ingredients.
